Cauliflower Stir Fry

Here’s a variation on stir fry that my family really enjoyed.  I’m always looking for easy recipes, where I can incorporate as many healthy ingredients as possible. Well here’s a super simple one that takes almost no time to prepare and is sure to please almost everyone.

Ingredients:

  • 1 head cauliflower, chopped
  • 1 carrot, chopped
  • 1 medium onion, chopped
  • kale, spinach or chard, a few leaves, finely chopped
  • 2-3 cloves garlic, minced
  • 12 oz whole wheat spaghetti
  • salt and pepper, to taste
  • bread crumbs
  • vegan Parmesan cheese

Preparation:

  1. Saute veggies in a little water in a large pan until tender, about 7-10 minutes.
  2. In the meantime, cook spaghetti according to instructions on box.
  3. Combine veggies and spaghetti, add salt and pepper.
  4. Top with bread crumbs and Parmesan cheese and serve.

Optional: You can also add any of the following for variety: a can of diced tomatoes (or fresh tomatoes), chopped sun-dried tomatoes, chopped red pepper, fresh basil, pinenuts
