Chocolate PB2 Oatmeal Cookies

Ingredients:

  • 1 C PB2 (120 calories)
  • ½ tspn baking soda
  • 1 ½ C quick cook oats (420 calories)
  • ¼ C cocoa powder (40 calories)
  • ¼ C shredded coconut (140 calories)
  • ¼ C chocolate chips (70 calories)
  • ½ cup of brown sugar – NOT firmly packed  (You can use less.) (360 calories)
  • ¼ tspn cinnamon
  • 2 egg whites (70 calories)
  • ½ C soy milk or almond milk (60 calories)
  • 1 tspn vanilla

Directions:

  1. Combine Chocolate PB2, baking soda, cocoa powder and cinnamon.  Stir in the oats and sugar.
  2. Combine egg whites, milk and vanilla.  Add to the oat mixture.
  3. Stir in the shredded coconut and chocolate chips.
  4. Drop batter one teaspoon at a time onto a cookie sheet.  Bake in a preheated 350 degree oven for 10 minutes.

Makes 32 cookies – approximately 37 calories per cookie.
