If you have someone coming for dinner that is a little reticent about vegetarian eating, this is a great recipe to prepare for them. Serve it along side some fresh guacamole and salsa and it is sure to please the pickiest eater. It’s also a great low-fat dish which will fill you up without making you feel overstuffed and uncomfortable.
Ingredients:
- 2 colored bell peppers (your choice) – thinly sliced
- 1 medium onion – thinly sliced
- 1 cup Soy Curls or 2 Portabello mushrooms, thinly sliced
- 1 T canola oil
- Salt, pepper, chili powder to taste
- Whole wheat tortillas
Preparation:
- Add 1 cup boiling water to Soy Curls to re-hydrate and let sit for 10 minutes or more.
- Heat oil in a large cast iron skillet.
- Add onions and peppers to hot skillet. Stir-fry for approximately 5 minutes or until they are soft and beginning to brown.
- Add Soy Curls or mushrooms. If using Portabellos, heat until mushrooms have begun to soften.
- Heat thoroughly and add spices and stir.
- Serve immediately with warm tortillas.
We love to add homemade guacamole to our fajitas. Not to brag, but people beg me for my guacamole recipe and/or to bring a big bowl of it whenever we have get-togethers.
