Mac ‘n “Cheese”

This is the best tasting “whole food” macaroni and cheese I have ever tried.  Everyone in our family, 86 y/o Nana, 8 and 10 y/o kids and husband LOVED it.

Ingredients:

  • 8 oz whole grain macaroni
  • ½ onion, chopped
  • 1 small potato, peeled and chopped
  • 1 carrot, chopped
  • ½ red, yellow or orange sweet pepper, chopped
  • 2 large garlic cloves or garlic powder
  • ½ C raw cashews
  • 1 ½ tsp lemon juice
  • ½ tsp Dijon mustard
  • 3 T Earth Balance
  • ½ tsp salt

Directions:

  1. Cook pasta and set aside.
  2. Place chopped veggies, except garlic, in a sauce pan and add water to cover.  Cover the pan and boil until the veggies are tender.
  3. Place garlic, cashews, lemon juice, mustard, Earth Balance, salt and ½ cup of veggie broth in a food processor or high power blender.  Blend until creamy, adding more broth as necessary.
  4. Add softened veggies, without any more broth, to the food processor or blender, and process until smooth.
  5. Pour sauce over cooked pasta and serve immediately.
