It's
Apple Season!

Finally,
the autumn harvest of apples is underway. Soon, the markets
will
be overflowing with a wonderful variety of new crop apples.
While
trying to find fresh apples close to home, I often reminisce about
visiting apple orchards while on vacation in
Georgia ,
North Carolina and
Tennessee
. I remember being
absolutely amazed at the
varieties of apples available; each apple with its own unique flavor,
texture and purpose. It was wonderful walking through the
fresh
air barns, bursting at the seams with the fall crop and being able to
grab any variety of apple we wanted and try it. I never
imagined
that a "fresh off-the-tree" apple would taste so different than the
ones which had traveled hundreds or thousands of miles to get to our
local market. We had a grand time that year picking out our
favorite apples and then trying to figure out how we were ever going to
get all of them home. We gorged ourselves on apples and still
had
bags and bags of apples stashed in every nook and cranny of the van for
our trip home. Every year I wish we could go back and go
"appleing". There is nothing like cool weather, fresh apple
cider
and the beautiful fall colors to get me in the mood for cooking up some

I was reading The
China Study
today and ran across some very interesting information. I
sometimes wonder if I am being a little too obsessive or odd about my
choice to eliminate all animal products from our diet. Then I
read information like what I read this morning, and I am so glad that
the Lord led me in the direction He has. Study after study
confirms the more than 8,000 statistically significant associations
between various dietary factors and disease that The China Study
eventually produced. These associations show over
and over
that our health is greatly affected by the number of animal products we
consume. Even relatively small intakes of animal-based
food are associated with adverse effects. Only the
Lord
knows the number of our days, and we cannot add or subtract any from
them, but we can control the quality of our
life. We
cannot control the circumstances that the Lord allows into our life,
but we can control our reaction to them. We cannot control
our
genetics, but we can control how our body responds to those
genetics. As for me, I am even more firmly committed to
continue
my journey towards Healthy Eating and Vibrant Living by keeping animal
products off of our table.
