My son Andy won Best in Division in the county fair with this recipe! He made muffins but you can make a round cake as well. It tastes great and it’s very low fat, too!
Ingredients:
- 2/3 C all-purpose flour
- ½ C whole wheat flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- 1 ½ cups peeled, cored and chopped apple
- Egg replacer equivalent to 1 egg, or 1 egg
- ¾ C sugar
- ¼ C chopped walnuts or pecans
- ¼ C applesauce
Topping:
- 1 T whole wheat flour
- ½ tsp cinnamon
- 1 T Earth Balance
- ¼ C chopped walnuts or pecans
Preparation:
- Spray either a 9 inch round baking pan or 12 muffin tins.
- Combine flours, soda, cinnamon and salt and set aside.
- Toss together apple and egg replacer in a large mixing bowl.
- Stir in sugar, walnuts and applesauce.
- Add flour mixture and stir just till combined.
- Pour into prepared pan or muffin tins.
- Mix topping ingredients and sprinkle over batter.
- Bake at 350 degrees for 30 to 35 minutes for cake and about 18 minutes for muffins.
