Apple Coffee Cake

My son Andy won Best in Division in the county fair with this recipe!  He made muffins but you can make a round cake as well.  It tastes great and it’s very low fat, too!

Ingredients:

  • 2/3 C all-purpose flour
  • ½ C whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 1 ½ cups peeled, cored and chopped apple
  • Egg replacer equivalent to 1 egg, or 1 egg
  • ¾ C sugar
  • ¼ C chopped walnuts or pecans
  • ¼ C applesauce

Topping:

  • 1 T whole wheat flour
  • ½ tsp cinnamon
  • 1 T Earth Balance
  • ¼ C chopped walnuts or pecans

Preparation:

  1. Spray either a 9 inch round baking pan or 12 muffin tins.
  2. Combine flours, soda, cinnamon and salt and set aside.
  3. Toss together apple and egg replacer in a large mixing bowl.
  4. Stir in sugar, walnuts and applesauce.
  5. Add flour mixture and stir just till combined.
  6. Pour into prepared pan or muffin tins.
  7. Mix topping ingredients and sprinkle over batter.
  8. Bake at 350 degrees for 30 to 35 minutes for cake and about 18 minutes for muffins.
