Ingredients:
- Egg Replacer equivalent to 2 eggs
- ½ C Earth Balance (vegan butter substitute) or apple sauce or combination
- 1 C sugar
- 1 tspn vanilla extract
- 2 C whole wheat flour
- ½ tspn salt
- 1 tspn baking soda
- ½ tspn cinnamon
- 3 medium bananas, mashed
- ½ C chopped nuts, optional
- 1/2 C raisins, optional
Preparation

- Preheat oven to 350 degrees.
- Cream sugar and Earth Balance together until creamy in a large bowl
- Add egg replacer and vanilla and stir.
- Add in dry ingredients and mix well.
- Mix in mashed bananas and optional chopped nuts/raisins.
- Place in muffin tins and bake at 350 degrees for about 30 minutes, until toothpick inserted comes out clean.
- Remove from oven and let cool on wire rack for 10 minutes.
