Ingredients
- Pinch of chili powder
- 1 clove garlic, minced
- 3 T fresh lime juice
- Pinch dried oregano
- ½ C red bell pepper, chopped
- 2 green onions, sliced thin
- ¾ C fresh or frozen corn, defrosted
- 1 15-oz can black beans, drained and rinsed
- 1 mango, peeled and cubed
Preparation
- Mix all ingredients and chill.
- Serve on a bed of chopped dark green lettuce OR use as filling for a wrap.
