Black Bean Mango Salad


  • Pinch of chili powder
  • 1 clove garlic, minced
  • 3 T fresh lime juice
  • Pinch dried oregano
  • ½ C red bell pepper, chopped
  • 2 green onions, sliced thin
  • ¾ C fresh or frozen corn, defrosted
  • 1 15-oz can black beans, drained and rinsed
  • 1 mango, peeled and cubed


  1. Mix all ingredients and chill.
  2. Serve on a bed of chopped dark green lettuce OR use as filling for a wrap.
