Cashew Whipped Topping

Wow! If you’re looking for a healthy alternative to whipped cream or artificial whipped topping, this one’s a keeper! It’s great on berries, desserts and anything else you would use whipped cream on.

 

Ingredients:

  • ½ cup plus 2 tablespoons raw cashew pieces
  • 1 cup plus 2 tablespoons water
  • 2 tablespoons fructose
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 2 tablespoons Resource ThickenUp or other instant food thickener

 

Preparation:

  1. Blend the cashews and ½ cup plus 2 tablespoons water on high until very smooth, about 2 minutes.
  2. Reduce speed and add fructose, salt, vanilla, and the remaining ½ cup water. Blend briefly on high, then add the food thickener and blend for about 30 seconds.
  3. Transfer to a bowl, cover, and refrigerate until serving.  Store in a covered container for up to 1 week.
