Here’s a variation on stir fry that my family really enjoyed. I’m always looking for easy recipes, where I can incorporate as many healthy ingredients as possible. Well here’s a super simple one that takes almost no time to prepare and is sure to please almost everyone.
Ingredients:
- 1 head cauliflower, chopped
- 1 carrot, chopped
- 1 medium onion, chopped
- kale, spinach or chard, a few leaves, finely chopped
- 2-3 cloves garlic, minced
- 12 oz whole wheat spaghetti
- salt and pepper, to taste
- bread crumbs
- vegan Parmesan cheese
Preparation:
- Saute veggies in a little water in a large pan until tender, about 7-10 minutes.
- In the meantime, cook spaghetti according to instructions on box.
- Combine veggies and spaghetti, add salt and pepper.
- Top with bread crumbs and Parmesan cheese and serve.
Optional: You can also add any of the following for variety: a can of diced tomatoes (or fresh tomatoes), chopped sun-dried tomatoes, chopped red pepper, fresh basil, pinenuts
