Ingredients:
- 1 C PB2 (120 calories)
- ½ tspn baking soda
- 1 ½ C quick cook oats (420 calories)
- ¼ C cocoa powder (40 calories)
- ¼ C shredded coconut (140 calories)
- ¼ C chocolate chips (70 calories)
- ½ cup of brown sugar – NOT firmly packed (You can use less.) (360 calories)
- ¼ tspn cinnamon
- 2 egg whites (70 calories)
- ½ C soy milk or almond milk (60 calories)
- 1 tspn vanilla
Directions:
- Combine Chocolate PB2, baking soda, cocoa powder and cinnamon. Stir in the oats and sugar.
- Combine egg whites, milk and vanilla. Add to the oat mixture.
- Stir in the shredded coconut and chocolate chips.
- Drop batter one teaspoon at a time onto a cookie sheet. Bake in a preheated 350 degree oven for 10 minutes.
Makes 32 cookies – approximately 37 calories per cookie.
