Cook Book – Vegetables from A to Z

* Are you tired of trying to figure out how to incorporate more vegetables into your diet?

* Tired of trying to find vegetable dishes which are easy to prepare with common ingredients?

* Tired of trying to disguise vegetables so your kids will eat them?

* Tired of the same old corn and peas but don’t know how to select and prepare other vegetables?

* Tired of spending hours searching for and preparing expensive and exotic vegetables only to find out your family doesn’t like them?

Vegetables from A to Z is the latest of my cookbooks and it has recipes for the most common vegetables found in grocers and produce markets.  These 60 recipes are a collection of the tastiest and easiest dishes that my family enjoys everyday.  My two children – now ages 9 and 11 – are my toughest critics and food tasters and each of these recipes has earned two thumbs up from them.  I’ve detailed how to select and prepare the most common vegetables you will find in grocers and produce markets – everything from Asparagus to Zucchini. You may use these recipes as side dishes, but most of them are hearty enough to be the focus of your dinner plate.  Even if you have never really enjoyed vegetables before, this book is guaranteed to make your taste buds dance with joy.

Learn to prepare dishes such as Roasted Asparagus, Sweet and Sour Red Cabbage, Italian Eggplant Roll-up, Schezwan Green Beans, and Zucchini Fiesta Mexicana, all with healthy ingredients and very little, if any fat. Eating healthy never tasted so good!!!

Thanks, Nancy, we have been vegetarians about a year and half, but I have wanted to live and eat this way for two thirds of my life.  My wife is a diabetic and eating this way is making a fantastic difference in her life.  Your vegetable cookbook is just what we have been looking for, down to earth  and easy to follow. Thanks again. ~ ~ ~ Jim  F.

Nancy, I just wanted to let you know we’ve tried two of your vegetable recipes already…roasted sweet potatoes and roasted asparagus…they were both delicious! My son even said that it’s his favorite way to have sweet potatoes prepared, and I tend to agree with him. We have never tried to prepare asparagus at home, but it was awesome. We all loved it! I’m very excited about trying some more of the recipes. ~ ~ ~ Wendy W

Nancy, I am so pleased with your cookbooks! I have tried many of the recipes already and have not been disappointed yet. They both sit on my kitchen counter where I can get to them quickly. I am so encouraged when I cook a healthy meal. Keep up the great work!
