Here’s a recipe that has “Holiday” written all over it. This is a delicious recipe that isn’t too sweet, and is a great way to use nutritious cranberries. (Sorry, the picture really doesn’t do it justice)
Ingredients:
- 1/2 C Earth Balance (vegan substitute for butter)
- egg replacer equivalent to 2 eggs
- 1 1/3 C sugar
- 2 C fresh cranberries
- 1 C white whole wheat flour
- 1/4 C apple sauce (in place of oil)
- 1 1/2 C chopped pecans (or walnuts)
Preparation:
- Preheat oven to 350° F. Grease a 10-inch pie plate.
- Melt Earth Balance.
- While Earth Balance melts, beat sugar and egg replacer on medium high until light and fluffy.
- Rinse, pick over, and dry cranberries.
- With the mixer on low, stir in Earth Balance, flour and apple sauce into sugar mixture until just combined, then stir in nuts. By hand, stir in cranberries.
- Spread batter evenly in pie plate, poking down any berries that stick up and covering them with a little batter. Bake for 45 minutes, until top begins to brown and tester comes out clean.
