Cranberry Pie

Here’s a recipe that has “Holiday” written all over it. This is a delicious recipe that isn’t too sweet, and is a great way to use nutritious cranberries. (Sorry, the picture really doesn’t do it justice)


Ingredients:

  • 1/2 C Earth Balance (vegan substitute for butter)
  • egg replacer equivalent to 2 eggs
  • 1  1/3 C sugar
  • 2 C fresh cranberries
  • 1 C white whole wheat flour
  • 1/4 C apple sauce (in place of oil)
  • 1  1/2 C chopped pecans (or walnuts)

Preparation:

  1. Preheat oven to 350° F. Grease a 10-inch pie plate.
  2. Melt Earth Balance.
  3. While Earth Balance melts, beat sugar and egg replacer on medium high until light and fluffy.
  4. Rinse, pick over, and dry cranberries.
  5. With the mixer on low, stir in Earth Balance, flour and apple sauce into sugar mixture until just combined, then stir in nuts. By hand, stir in cranberries.
  6. Spread batter evenly in pie plate, poking down any berries that stick up and covering them with a little batter. Bake for 45 minutes, until top begins to brown and tester comes out clean.
