Curry Brown Rice Salad

This is a great and easy cold salad which is very refreshing and delightfully different.  The variety of colors makes it very pleasing to the eye as well and a great addition to your outdoor barbecues.

 

Ingredients:

  • 1C cooked brown rice
  • ½ C parsley, chopped
  • 1/3 C red onion, chopped
  • 1/3 C celery, chopped
  • 1/3 C red pepper, chopped
  • 1 small apple, chopped
  • 3 T chopped dried cranberries
  • 3 T toasted sunflower seeds
  • 1-2 T fat-free mayonnaise
  • ¼ cup plain soy yogurt
  • 1 T rice wine vinegar
  • ¾ tspn curry
  • Salt and pepper to taste

Preparation:

  1. Combine rice, parsley, red onion, celery, red pepper, apple, cranberries and sunflower seeds in a large bowl.
  2. Combine mayonnaise, yogurt. vinegar and curry in a small bowl. Mix well.
  3. Add mayonnaise mixture to rice 3 mixture.
  4. Cover and refrigerate for 30. minutes before serving to let flavors blend.
