Curry Brown Rice Salad
This is a great and easy cold salad which is very refreshing and delightfully different. The variety of colors makes it very pleasing to the eye as well and a great addition to your outdoor barbecues.
Ingredients:
- 1C cooked brown rice
- ½ C parsley, chopped
- 1/3 C red onion, chopped
- 1/3 C celery, chopped
- 1/3 C red pepper, chopped
- 1 small apple, chopped
- 3 T chopped dried cranberries
- 3 T toasted sunflower seeds
- 1-2 T fat-free mayonnaise
- ¼ cup plain soy yogurt
- 1 T rice wine vinegar
- ¾ tspn curry
- Salt and pepper to taste
Preparation:
- Combine rice, parsley, red onion, celery, red pepper, apple, cranberries and sunflower seeds in a large bowl.
- Combine mayonnaise, yogurt. vinegar and curry in a small bowl. Mix well.
- Add mayonnaise mixture to rice 3 mixture.
- Cover and refrigerate for 30. minutes before serving to let flavors blend.
