Easy Blueberry Cobbler

I have been making this cobbler for over 15 years and it is my favorite way to eat blueberries – although homemade blueberry pie is really good too.  This cobbler is so easy to make that you also may find it becoming your favorite way to eat blueberries.

Ingredients:

  • ¾ C white whole wheat flour
  • ½ C sugar
  • 1 1 /2 tspn baking powder
  • 2/3 C soy, rice or almond milk
  • 2 T Earth Balance
  • 2 C blueberries, rinsed and drained

Preparation:

  1. Preheat the oven to 350 degrees.  While preheating the oven, place a 1 or 1 ½ quart casserole-type dish in the oven with the 2 T of Earth Balance in it.
  2. In a medium bowl, combine the flour, sugar, baking powder and milk.  Stir until the batter is smooth.
  3. Pour the batter over the melted butter in the casserole dish.
  4. Sprinkle the blueberries on top.
  5. Bake the cobbler for 40-45 minutes or until it is lightly browned.
  6. Serve warm.  (Don’t count on any leftovers!)
