I have been making this cobbler for over 15 years and it is my favorite way to eat blueberries – although homemade blueberry pie is really good too. This cobbler is so easy to make that you also may find it becoming your favorite way to eat blueberries.
Ingredients:
- ¾ C white whole wheat flour
- ½ C sugar
- 1 1 /2 tspn baking powder
- 2/3 C soy, rice or almond milk
- 2 T Earth Balance
- 2 C blueberries, rinsed and drained
Preparation:
- Preheat the oven to 350 degrees. While preheating the oven, place a 1 or 1 ½ quart casserole-type dish in the oven with the 2 T of Earth Balance in it.
- In a medium bowl, combine the flour, sugar, baking powder and milk. Stir until the batter is smooth.
- Pour the batter over the melted butter in the casserole dish.
- Sprinkle the blueberries on top.
- Bake the cobbler for 40-45 minutes or until it is lightly browned.
- Serve warm. (Don’t count on any leftovers!)
