Eggplant Pizza Stacks

I was going to make some fancy eggplant lasagna, but I just didn’t have the time or energy to tackle it.  So, I created the pizza stacks and everyone truly loved them.  Next time, I may include sliced olives or fresh spinach and tomatoes – I will let my imagination run wild and so should you.


  • Eggplant, peeled and sliced into ¼ inch thick slices
  • Fat Free Ranch Dressing
  • Breadcrumbs
  • “Pizza” sauce
  • Veggie Mozzarella cheese


  1. Preheat oven to 375 degrees.
  2. Coat both sides of eggplant slices with ranch dressing, then coat with bread crumbs.
  3. Place prepared eggplant slices on cookie sheet, sprayed with oil Bake at 375 for 40 minutes, 20 minutes on each side.
  4. Remove from oven, top with a spoonful of pizza sauce and cheese.
  5. Return to oven and broil until cheese has melted.
