I was going to make some fancy eggplant lasagna, but I just didn’t have the time or energy to tackle it. So, I created the pizza stacks and everyone truly loved them. Next time, I may include sliced olives or fresh spinach and tomatoes – I will let my imagination run wild and so should you.
Ingredients:
- Eggplant, peeled and sliced into ¼ inch thick slices
- Fat Free Ranch Dressing
- Breadcrumbs
- “Pizza” sauce
- Veggie Mozzarella cheese
Directions:
- Preheat oven to 375 degrees.
- Coat both sides of eggplant slices with ranch dressing, then coat with bread crumbs.
- Place prepared eggplant slices on cookie sheet, sprayed with oil Bake at 375 for 40 minutes, 20 minutes on each side.
- Remove from oven, top with a spoonful of pizza sauce and cheese.
- Return to oven and broil until cheese has melted.
