Fudge Brownies


  • 1 ¼ C whole wheat flour
  • 1 cup sugar
  • ½ C cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 2 T canola or safflower oil
  • 1 T vanilla extract
  • ¾ C firm silken tofu, crumbled
  • ½ C water
  • ½ pure maple syrup
  • ½ to 1 C chopped walnuts or pecans (if desired)


  1. Preheat oven to 350oF
  2. Mist an 8-inch square glass baking pan with non-stick baking spray.
  3. Combine flour, sugar, cocoa powder, baking powder and salt in a medium bowl and stir together until well combined.
  4. Combine tofu, water, maple syrup, oil and vanilla in blender and process until completely smooth.
  5. Pour into the dry ingredients and stir until well combined.
  6. Fold in nuts, if you’re adding them.
  7. Pour batter evenly into lightly oiled pan (non-stick spray)
  8. Bake on center rack of oven for 40 minutes, or until a cake tester inserted in center comes out clean.
  9. Cool in the pan, cut and serve.
