Ingredients:
- 1 ¼ C whole wheat flour
- 1 cup sugar
- ½ C cocoa powder
- ¼ tsp baking powder
- ¼ tsp salt
- 2 T canola or safflower oil
- 1 T vanilla extract
- ¾ C firm silken tofu, crumbled
- ½ C water
- ½ pure maple syrup
- ½ to 1 C chopped walnuts or pecans (if desired)
Preparation
- Preheat oven to 350oF
- Mist an 8-inch square glass baking pan with non-stick baking spray.
- Combine flour, sugar, cocoa powder, baking powder and salt in a medium bowl and stir together until well combined.
- Combine tofu, water, maple syrup, oil and vanilla in blender and process until completely smooth.
- Pour into the dry ingredients and stir until well combined.
- Fold in nuts, if you’re adding them.
- Pour batter evenly into lightly oiled pan (non-stick spray)
- Bake on center rack of oven for 40 minutes, or until a cake tester inserted in center comes out clean.
- Cool in the pan, cut and serve.
