Country Herb Lentil
and Vegetable Soup Mix
This is an absolutely WONDERFUL and BEAUTIFUL gift to give to those you care about. The soup looks lovely in the jar, and tastes even better. I am always amazed at how often I am asked for the full recipe from those I have given the soup mix to. At less than 2 dollars for the ingredients, it is also a very economical and practical gift.
Layer these items in the jar. I like to use a wide mouthed quart size mason jar. I also add a thin layer of plastic wrap between the lentils and the pasta. This helps separate the pasta from the other ingredients when preparing since the pasta does not go into the soup until the last 10 minutes.
Ingredients:
- 3 T dried minced onion
- 2 T dried parsley
- ½ tspn oregano
- ½ tspn garlic pepper
- 2 T McKay’s beef-style broth granules
- ¼ cup pearled barley
- 1 C dried split peas
- 1 C dried lentils
- 1 C multicolored pasta
- 1 bay leaf

- Country Herb Lentil and Vegetable Soup Mix
- 3 quarts water
- ½ C chopped celery
- ¼ C chopped carrots
- 1 can diced garlic herb tomatoes
Directions:
- Combine soup mix (without pasta), 3 quarts water.
- Add celery, carrots, tomatoes – cook for about 40 minutes until beans and veggies are tender.
- Add pasta and cook for about 10 minutes more.
- Remove bay leaf and serve.
