Ingredients:
- 1 cup whole wheat flour
- 1 cup yellow cornmeal
- 2/3 cup white sugar
- 1 tsp salt
- 3 1/2 tsp baking powder
- 2-3 T ground flax seeds (optional)
- Egg replacer equivalent to 1 egg
- 1 cup soy milk
- 1/3 cup oil (or substitute apple sauce)
- 1/2 cup frozen whole kernel corn (optional)
Preparation:
- Preheat oven to 400 degrees F. Spray or lightly grease a 9 inch round cake pan or cast iron skillet.
- In a large bowl. combine flour, cornmeal, sugar, salt, flax seed and baking powder. Stir in egg replacer, milk, vegetable oil (or apple sauce) and corn until well combined. Pour batter into prepared pan or skillet.
- Bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
