I have often seen recipes for granola and found them to be so high in fat that they couldn’t be considered healthy in any way. I found this recipe and modified it to my liking. The dry ingredient list can be varied greatly to include those items you like or have on hand. The first time I baked the granola for 15 minutes and it was not crunchy. I kept returning it to the oven in 10 minute increments until it had the nice crunch I wanted. Be sure to use real maple syrup. This is great right out of the bag or container, as a dry cereal, or as a topping.
Ingredients:
- 2 1/2 C old fashioned oats
- 1/2 C ground flax seed
- 1/4 to 1/2 C chopped walnuts
- 1/4 C shredded coconut
- 1/2 C golden raisins
- 1/2 tspn cinnamon
- 1/4 tspn allspice
- 1/4 to 1/2 C pure maple syrup
- pinch of salt
Directions:
1. Preheat oven to 325. Spread oats, flax and walnuts in a 9 X 13 inch baking pan. Place in oven for 10 minutes.
2. Remove from the oven and reduce the temperature to 300. Add the raisins, coconut, maple syrup, cinnamon, allspice and salt. and stir to combine.
3. Return the pan to the oven and bake for 15 to 30 minutes, or until the mixture is crisp and dry. Be careful not to burn.
4. Remove from oven and let cool completely – approximately 30 minutes. Transfer to an airtight container.
