Kale Chips

Here’s one of the healthiest snacks you’ll ever find. A friend shared this recipe with me and even my kids fight over it. It took me a time or two to get the crispness right, but it was well worth the effort.

Ingredients:

  • 1-2 bunches of kale
  • 1 T olive oil
  • Sea salt

Preparation:

  1. Wash Kale, get off as much water as possible, cut off spine and cut into bite size pieces.
  2. Drizzle olive oil and rub your hands through the kale so the olive oil coats the kale.
  3. Sprinkle with salt (don’t overdo it)
  4. Spread out evenly on cookie sheet.
  5. Bake at 250°F for 35 min or until edges are a golden brown color, otherwise they will be soggy.
  6. Let it cool to room temperature before you put in an air tight container (if there’s any left) 🙂
