A reader sent me this recipe for a great Layered Summer Casserole. We have made it several times and enjoyed it immensely. The casserole is very easy to prepare and beautiful to look at.
Ingredients:
- 2 medium zucchini, very thinly sliced
- 2 medium yellow squash, very thinly sliced
- 1 small onion, very thinly sliced
- 3-4 roma tomatoes, very thinly sliced
- 15-20 crackers, crumbled into crumbs
- ½ cup shredded vegan cheddar cheese
Directions:
- Preheat oven to 350 degrees
- Grease an 11×7 pan. Arrange the ingredients in the following order:
- ½ of zucchini slices
- ½ of yellow squash slices
- ½ of onion slices
- ½ of roma tomato slices
- ½ of shredded cheese
- ½ of cracker crumbs
- Repeat the layers. Cover and place in preheated oven for approximately 30 minutes. Remove from oven, uncover and let it stand for approximately 10 minutes before serving.
