Layered Summer Casserole

A reader sent me this recipe for a great Layered Summer Casserole.  We have made it several times and enjoyed it immensely.  The casserole is very easy to prepare and beautiful to look at.


  • 2 medium zucchini, very thinly sliced
  • 2 medium yellow squash, very thinly sliced
  • 1 small onion, very thinly sliced
  • 3-4 roma tomatoes, very thinly sliced
  • 15-20 crackers, crumbled into crumbs
  • ½ cup shredded vegan cheddar cheese


  1. Preheat oven to 350 degrees
  2. Grease an 11×7 pan.  Arrange the ingredients in the following order:
  3. ½ of zucchini slices
  4. ½ of yellow squash slices
  5. ½ of onion slices
  6. ½ of roma tomato slices
  7. ½ of shredded cheese
  8. ½ of cracker crumbs
  9. Repeat the layers.  Cover and place in preheated oven for approximately 30 minutes.  Remove from oven, uncover and let it stand for approximately 10 minutes before serving.
