This is a very easy recipe that can be made ahead and put in the oven on timed bake.
Ingredients:
- 3 C chicken-style or vegetable broth (I like McKay’s)
- 3/4 C uncooked lentils, washed
- 1/2 C uncooked brown rice
- 1/4 C instant minced onion flakes or 3/4 C chopped fresh onions
- 1/2 tsp basil leaves
- 1/4 tsp oregano leaves
- 1/4 tsp thyme
- 1/4 tsp garlic powder or 1-2 cloves fresh garlic
- 3/4 shredded vegan cheddar cheese
Preparation:
- Blend all ingredients except cheese together in a casserole dish.
- Bake covered at 300° F for 2 – 2 1/2 hours until tender and the water is absorbed.
- Stir to mix spices and top with cheese, continue in oven for about 20 minutes until cheese is melted.
- To serve, either mix the cheese into the mixture or simply scoop out portions along with the cheese topping.
This recipe is easily doubled for a larger family or you can make two. It freezes well!
