Lentil Rice Casserole

This is a very easy recipe that can be made ahead and put in the oven on timed bake.

Ingredients:

  • 3 C chicken-style or vegetable broth (I like McKay’s)
  • 3/4 C uncooked lentils, washed
  • 1/2 C uncooked brown rice
  • 1/4 C instant minced onion flakes or 3/4 C chopped fresh onions
  • 1/2 tsp basil leaves
  • 1/4 tsp oregano leaves
  • 1/4 tsp thyme
  • 1/4 tsp garlic powder or 1-2 cloves fresh garlic
  • 3/4 shredded vegan cheddar cheese

Preparation:

  1. Blend all ingredients except cheese together in a casserole dish.
  2. Bake covered at 300° F for 2 – 2 1/2 hours until tender and the water is absorbed.
  3. Stir to mix spices and top with cheese, continue in oven for about 20 minutes until cheese is melted.
  4. To serve, either mix the cheese into the mixture or simply scoop out portions along with the cheese topping.

This recipe is easily doubled for a larger family or you can make two. It freezes well!
