Lentil Soup

Ingredients:

  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 6 celery ribs, chopped
  • 3 carrots, chopped coarse
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp dried thyme, crumble
  • 5 c water
  • 5c chicken broth or veggie chicken broth
  • 2 bay leaves
  • 2 tsp dark brown sugar
  • 2 T ketchup
  • 3 c coarsely chopped canned plum tomatoes
  • 2 c lentils, rinsed
  • ½ c dry sherry

Preparation:

  1. Cook onions in water over moderate heat, stirring occasionally, until softened;
  2. Add garlic, celery and carrots. Add water as needed while sautéing.
  3. Cook vegetables 10-15 minutes, until softened.
  4. Add all remaining ingredients and simmer 2 hours or until lentils are tender
