Lima Bean Soup


  • 1 small onion, chopped
  • 1 28oz can diced tomatoes
  • 1 16oz can pinto beans
  • 1 10 oz package frozen lima beans
  • 1 19oz can white kidney beans
  • 1 T brown sugar
  • ¼ tsp salt
  • 1 c water


  1. Cook onion in small amount of water until it is translucent, stirring occasionally.
  2. Add tomatoes with their liquid, pinto beans, lima beans, brown sugar, salt and water.
  3. Bring to boil.
  4. Reduce heat to low; cover and simmer for 15 minutes or until lima beans are tender, stirring occasionally and serve.
