Mac ‘n “Cheese”
This is the best tasting “whole food” macaroni and cheese I have ever tried. Everyone in our family, 86 y/o Nana, 8 and 10 y/o kids and husband LOVED it.
Ingredients:
- 8 oz whole grain macaroni
- ½ onion, chopped
- 1 small potato, peeled and chopped
- 1 carrot, chopped
- ½ red, yellow or orange sweet pepper, chopped
- 2 large garlic cloves or garlic powder
- ½ C raw cashews
- 1 ½ tsp lemon juice
- ½ tsp Dijon mustard
- 3 T Earth Balance
- ½ tsp salt
Directions:
- Cook pasta and set aside.
- Place chopped veggies, except garlic, in a sauce pan and add water to cover. Cover the pan and boil until the veggies are tender.
- Place garlic, cashews, lemon juice, mustard, Earth Balance, salt and ½ cup of veggie broth in a food processor or high power blender. Blend until creamy, adding more broth as necessary.
- Add softened veggies, without any more broth, to the food processor or blender, and process until smooth.
- Pour sauce over cooked pasta and serve immediately.
