Mock Tuna Salad


  • 1  19-oz can garbanzo beans, rinsed, drained & mashed
  • 1 celery stalk, diced
  • 1 T minced green onion
  • 2 T grated carrot
  • 2 T vegan mayonnaise or less to taste
  • 2 T tamari
  • 1 T lemon juice

  1. Mix the celery, onion and carrot into the mashed garbanzo beans.
  2. Stir together the mayonnaise, tamari, and lemon juice in a small bowl.
  3. Add the mayonnaise mixture to the mashed beans and vegetables and mix well.
