Okay, I must be on a healthy chocolate binge lately – but we love this recipe. It is not low in calories due to the walnuts, but still delicious whole food that makes a wonderful splurge.
Ingredients:
- 1 C walnuts
- 8 dates – with no pits
- ½ C cocoa powder
- Pinch of salt
- ¼ cup chopped peanuts or mini-chocolate chips
Directions:
- Grind walnuts about 1 minute in food processor
- Add dates to walnuts in food processor. Add them one at a time – and make sure they do not have pits.
- Add cocoa powder and salt to food processor- blend until smooth scraping the sides as necessary
- Place contents into a small pan, press mixture down. Add chopped nuts or mini-chips on top.
- Serve.
