No Bake Brownies

Okay, I must be on a healthy chocolate binge lately – but we love this recipe. It is not low in calories due to the walnuts, but still delicious whole food that makes a wonderful splurge.


  • 1 C walnuts
  • 8 dates – with no pits
  • ½ C cocoa powder
  • Pinch of salt
  • ¼ cup chopped peanuts or  mini-chocolate chips


  1. Grind walnuts about 1 minute in food processor
  2. Add dates to walnuts in food processor. Add them one at a time – and make sure they do not have pits.
  3. Add cocoa powder and salt to food processor- blend until smooth scraping the sides as necessary
  4. Place contents into a small pan, press mixture down. Add chopped nuts or mini-chips on top.
  5. Serve.
