On Christmas Eve we attend our church’s worship service and then come home to a very relaxed meal – and believe it or not that meal has become a Soy Curl melt sandwich modeled after a BBQ sandwich my family fell in love with on a camping trip years and years ago. We refer to it as a Non-pig melt. I never would have thought that a simple BBQ sandwich would become our family’s traditional Christmas Eve meal – but I think the kids would be really upset with me if I changed it to something fancier. Perhaps it just sets the tone of a time of relaxation and remembrance of fun family memories.
Ingredients:
- Fresh bread of your choosing – we like whole wheat bread or pumpernickel bread
- Soy Curls, rehydrated
- BBQ Sauce of your choosing
- Vegan “cheese” slices
- Garlic powder
- Earth Balance
Directions:
- Coat the rehydrated Soy Curls in BBQ sauce and heat thoroughly
- Butter the outside of your sandwich bread slices.
- Place one slice of bread for each sandwich butter side down on a hot griddle.
- Top with Soy Curls, sprinkle with garlic powder, top with vegan “cheese” slice and close the sandwich with the second slice of bread – butter side up.
- Grill until bottom slice is brown. Flip the sandwich and grill the remaining side until brown.
- Remove from grill, serve immediately and enjoy!
