I developed this recipe when we had a craving for pear pie, but I was too busy that day to take the time to make a pie crust. This fit the bill! It is fast, easy and really tasty. I like to use Bartlett pears because they are so nice and juicy. If you use a less juicy pear, you may want to use a little less cornstarch in the filling.
Ingredients
Filling:
- 4-5 ripe pears
- Juice from one lemon
- 2 T cornstarch
- 1 tspn dried ginger
- 1 tspn cinnamon
- 2 T brown sugar
Topping:
- 1 tsp cinnamon
- 2/3 cup almonds, pecans OR walnuts (use what you like)
- ½ cup raisins
- ½ cup rolled oats
- 2 T brown sugar
- 1 TBS honey
- 2-3 T Earth Balance
Preparation
- Preheat oven to 350.
- Cut pears into quarters, cut out core and slice ¼ inch thick.
- Toss pears with lemon juice, cornstarch, ginger, cinnamon and brown sugar. Place in 8×8 baking dish.
- For the topping, place the nuts, oats and raisins in the bowl of a food processor. Pulse until well ground and mixed. Then add brown sugar, honey and Earth Balance. Pulse only till crumbled.
- Cover pears with the topping.. Bake for about 35 minutes until pears are bubbling.
