Ingredients:
- 1 large onion, chopped
- ¼ cup walnuts, chopped
- 1 cup TVP rehydrated with 1 cup boiling water
- ½ tspn coriander
- ¼ tspn dried thyme
- ¼ tspn black pepper
- 1 cup frozen green peas, thawed
- Juice from ½ large lemon
- 1 T soy sauce
- 2 cups “beef” gravy
- 1-2 cups mashed potatoes
Preparation:
- Preheat over to 350 degrees.
- Saute onion in water until tender. Add remaining ingredients, except mashed potatoes and heat thoroughly.
- Pour mixture into large baking dish, approximately 11x7x1½.
- Cover mixture with mashed potatoes. (The potatoes can be spread, or arranged in small dollops.)
- Bake for approximately 20 minutes.

Please note: Although I have several recipes that include TVP, it’s not very often that I include it on my personal menus, opting for less-processed foods. When I do want that texture, what I have started doing lately is chopping up soy curls and using that instead. Soy curls are a whole, unprocessed, non-GMO food that gives the same texture as TVP. You can also find non-GMO or organic TVP at many health food stores.
