For years I had tried dozens of “meat”ball recipes trying to find one that my children liked as much as prepackaged vegetarian meat balls. I finally tried this one and it was a big hit with all of us. This dish is easy and cheap to prepare and the whole family enjoyed the taste and the texture.
Ingredients:
- 2 cups TVP reconstituted with 1 3/4 cups boiling water
- 1/2 cup water
- 1 small onion, diced
- 1/2 cup unbleached flour
- 1 teaspoon salt or 1 T McKay’s beef seasoning
- 1 tablespoon low-sodium soy sauce
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon oregano
Preparation:
- Rehydrate TVP.
- Water saute’ onion until soft.
- Mix all ingredients and shape this mixture into balls one inch in diameter, pressing firmly.
- Spray vegetable oil into a non-stick pan and cook balls until browned.
- Serve with your favorite tomato sauce in whole grain buns or over pasta.

Please note: Although I have several recipes that include TVP, it’s not very often that I include it on my personal menus, opting for less-processed foods. When I do want that texture, what I have started doing lately is chopping up soy curls and using that instead. Soy curls are a whole, unprocessed, non-GMO food that gives the same texture as TVP. You can also find non-GMO or organic TVP at many health food stores.
