Ingredients:
- 1 medium onion, minced
- 1 red pepper, minced
- 2 cloves garlic, minced
- 1 medium butternut squash, peeled, seeded and chopped
- 1 16 oz bag of frozen butter beans
- 1 16 oz bag of frozen corn kernels
- 4 cups vegetable or chicken stock
- 1 tspn rubbed, dried sage
- Salt and pepper to taste
Preparation:
- Water sauté the onion, pepper and garlic over medium heat until the onion is tender.
- Add the remaining ingredients, except salt and pepper, and simmer for approximately 45 minutes or until all ingredients are tender and the squash starts to “fall apart”.
- Add salt and pepper to taste and serve immediately.
