Most people love lasagna. The problem is that with all the meat and cheese, it’s not the healthiest dish you can eat. Here’s my version of this tasty dish that is healthy and tastes great too!
Ingredients:
- spaghetti sauce of your choice (6-8 cups)
- 1 pkg whole wheat lasagna noodles
- ricotta-style cheese (double the recipe)
- 1 lb frozen, chopped broccoli (defrosted)
- shredded vegan cheese
Preparation:
Layer:
- Sauce – about 1 cup
- uncooked whole wheat lasagna noodles
- ricotta-style cheese (1/2)
- broccoli – 1/2 lb
- sauce – about 2 cups
- noodles
- ricotta – (1/2)
- broccoli – 1/2 lb
- sauce – about 2 cups
- noodles
- sauce – enough to cover
- shredded vegan cheese
Then…
- Bake, covered at 350° F for about 45 minutes.
- Uncover, let “cheese” brown.
- Remove from oven, let stand for 10 minutes before serving.
