Nancy, I just wanted to let you know we’ve tried two of your vegetable recipes already…roasted sweet potatoes and roasted asparagus…they were both delicious! My son even said that it’s his favorite way to have sweet potatoes prepared, and I tend to agree with him. We have never tried to prepare asparagus at home, but it was awesome. We all loved it! I’m very excited about trying some more of the recipes.

Thanks, Nancy, we have been vegetarians about a year and half, but I have wanted to live and eat this way for two thirds of my life. My wife is a diabetic and eating this way is making a fantastic difference in her life. Your vegetable cookbook is just what we have been looking for, down to earth and easy to follow. Thanks again
