Ingredients:
- 1 Cup sugar
- Egg replacer – equivalent to 1 egg
- ½ cup applesauce
- 1 cup grated zucchini
- 1 T vanilla
- 1 ½ cups whole wheat flour
- 1 ½ tspn cinnamon
- ½ tspn baking soda
- 1/8 tspn salt
Preparation:
- Preheat oven to 325 degrees F.
- Beat egg replacer, sugar, applesauce, zucchini and vanilla.
- Add dry ingredients.
- Pour into loaf pan and bake for approximately 50-55 minutes.
- Remove from oven, let cool in pan for 10 minutes. Remove from loaf pan and cool on rack.

My family LOVES this as well as anyone else that I share it with. I am looking forward to zucchini out of my garden so we can make this a couple of times a week.
