Zucchini Bread

Ingredients:

  • 1 Cup sugar
  • Egg replacer – equivalent to 1 egg
  • ½ cup applesauce
  • 1 cup grated zucchini
  • 1 T vanilla
  • 1 ½ cups whole wheat flour
  • 1 ½ tspn cinnamon
  • ½ tspn baking soda
  • 1/8 tspn salt

Preparation:

  1. Preheat oven to 325 degrees F.
  2. Beat egg replacer, sugar, applesauce, zucchini and vanilla.
  3. Add dry ingredients.
  4. Pour into loaf pan and bake for approximately 50-55 minutes.
  5. Remove from oven, let cool in pan for 10 minutes.  Remove from loaf pan and cool on rack.

Love this recipe! My whole family loves it, I’ve made it several times now. It freezes well too. Thanks for sharing.

My family LOVES this as well as anyone else that I share it with. I am looking forward to zucchini out of my garden so we can make this a couple of times a week.
