Banana Muffins

Ingredients:
  • Egg Replacer equivalent to 2 eggs
  • ½ C Earth Balance (vegan butter substitute) or apple sauce  or combination
  • 1 C sugar
  • 1 tspn vanilla extract
  • 2 C whole wheat flour
  • ½ tspn salt
  • 1 tspn baking soda
  • ½ tspn cinnamon
  • 3 medium bananas, mashed
  • ½ C chopped nuts, optional
  • 1/2 C raisins, optional
Preparation

    1. Preheat oven to 350 degrees.
    2. Cream sugar and Earth Balance together until creamy in a large bowl
    3. Add egg replacer and vanilla and stir.
    4. Add in dry ingredients and mix well.
    5. Mix in mashed bananas and optional chopped nuts/raisins.
    6. Place in muffin tins and bake at 350 degrees for about 30 minutes, until toothpick inserted comes out clean.
    7. Remove from oven and let cool on wire rack for 10 minutes.
