Tomato Potato Soup

Ingredients:

  • 4 c vegetable broth
  • 3 c potatoes, finely diced
  • ½ c onion, minced
  • 1 c sliced mushrooms
  • 2 cloves garlic, minced
  • 5 Roma tomatoes, chopped
  • 2 c raw spinach, chopped
  • 1 c lima beans, frozen (optional)
  • 1 c corn, frozen (optional)
  • 1 tsp dried parsley flakes
  • Pinch of basil
  • Pinch of oregano
  • Pinch of black pepper

Preparation:

Add all ingredients to broth and simmer for 30 minutes.
