This has to be the easiest blueberry pie I have ever made. We all adore the taste and have it often.
It works well with frozen or fresh blueberries. Be sure to use a deep dish pie pan.
I have tried this with a regular crust, graham cracker crust,
and with no crust. It is good every single way.
Ingredients
- 1 pie crust (optional)
Filling
- 3-4 cups blueberries
- 7 T cornstarch
- 3 T water
- 2 T lemon juice
- 1 tspn cinnamon
- ¼ tspn allspice
- 2/3 C sugar
Topping
- ¼ C sugar
- ½ C flour
- ¼ C Earth Balance
Preparation
- Preheat the oven to 375 degrees.
- Pile the blueberries into the pie pan. Mix together the remaining filling ingredients.
- Pour the mixture over the blueberries. (Do not mix, just pour on top.)
- Blend the topping ingredients until crumbly. Add to the top of the blueberries and back at 375 degrees for approximately 1 hour.
