Blueberry Pie

This has to be the easiest blueberry pie I have ever made.  We all adore the taste and have it often.
It works well with frozen or fresh blueberries.  Be sure to use a deep dish pie pan.
I have tried this with a regular crust, graham cracker crust,
and with no crust.  It is good every single way.

Ingredients

  • 1 pie crust (optional)

Filling

  • 3-4 cups blueberries
  • 7 T cornstarch
  • 3 T water
  • 2 T lemon juice
  • 1 tspn cinnamon
  • ¼ tspn allspice
  • 2/3 C sugar

Topping

  • ¼ C sugar
  • ½ C flour
  • ¼ C Earth Balance

Preparation

  1. Preheat the oven to 375 degrees.
  2. Pile the blueberries into the pie pan.  Mix together the remaining filling ingredients.
  3. Pour the mixture over the blueberries.  (Do not mix, just pour on top.)
  4. Blend the topping ingredients until crumbly.  Add to the top of the blueberries and back at 375 degrees for approximately 1 hour.
