Ingredients:
- 1 medium onion, chopped
- 1 large tomato, chopped
- 3/4 lb okra, cut into1/2″ slices
- 2 large ears corn, raw, cut from cob
- 1 Tbsn peanut oil
- 1/4 cup water
- 1 tspn cider vinegar
Preparation:
- In skillet, water sautee’ onion until soft
- Add okra and oil and sautee’ until okra begins to brown.
- Add tomato and water and simmer until liquid is evaporated.
- Add corn and vinegar and cook over moderately high heat until corn is crisp tender or about 2 minutes.
