Corn and Okra w/Tomatoes


  • 1 medium onion, chopped
  • 1 large tomato, chopped
  • 3/4 lb okra, cut into1/2″ slices
  • 2 large ears corn, raw, cut from cob
  • 1 Tbsn peanut oil
  • 1/4 cup water
  • 1 tspn cider vinegar


  1. In skillet, water sautee’ onion until soft
  2. Add okra and oil and sautee’ until okra begins to brown.
  3. Add tomato and water and simmer until liquid is evaporated.
  4. Add corn and vinegar and cook over moderately high heat until corn is crisp tender or about 2 minutes.
