PB2 Raisin Oatmeal Cookies

Reduced calorie/reduced fat cookies

Ingredients:

  • 1 C PB2* (120 calories)
  • ½ tspn baking soda
  • 1 ½ C quick cook oats (420 calories)
  • ½ cup of brown sugar – NOT firmly packed  (You can use less.) (360 calories)
  • ¼ tspn cinnamon
  • 2 egg whites (70 calories)
  • ½ C soy milk or almond milk (60 calories)
  • 1 tspn vanilla
  • 1 C raisins (520 calories)

Directions:

  1. Combine PB2, baking soda and cinnamon.  Stir in the oats and sugar.
  2. Combine egg whites, milk and vanilla.  Add to the oat mixture.
  3. Stir in the raisins.
  4. Drop batter one teaspoon at a time onto a cookie sheet.  Bake in a preheated 350 degree oven for 10 minutes.
  5. Makes 32 cookies – approximately 46 calories per cookie.
