Ingredients :
- 4 cups sliced peaches (fresh or frozen)
- 1 cup sugar, divided
- 1/2 cup Earth Balance (butter substitute)
- 3/4 cup whole wheat flour
- 2 tspn baking powder
- 3/4 cup soy milk
Preparation:
- Combine peaches and 1/2 sugar, let stand 15 minutes until juice forms.
- Melt Earth Balance @ 350 degrees F in 11×7 dish/pan.
- Stir together remaining 1/2 cup sugar, flour, baking powder & soy milk; pour mixture over Earth Balance. (Do not stir). Spoon on peaches.
- Bake @ 350degrees F for 55 minutes.
- Serve warm and enjoy.
