Peach Cobbler

Ingredients :

  • 4 cups sliced peaches (fresh or frozen)
  • 1 cup sugar, divided
  • 1/2 cup Earth Balance (butter substitute)
  • 3/4 cup whole wheat flour
  • 2 tspn baking powder
  • 3/4 cup soy milk
Preparation:
  1. Combine peaches and 1/2 sugar, let stand 15 minutes until juice forms.
  2. Melt Earth Balance @ 350 degrees F in 11×7 dish/pan.
  3. Stir together remaining 1/2 cup sugar, flour, baking powder & soy milk; pour mixture over Earth Balance. (Do not stir). Spoon on peaches.
  4. Bake @ 350degrees F for 55 minutes.
  5. Serve warm and enjoy.
