A healthier version of an old-time favorite
Ingredients:
- 3 C leftover cooked brown rice
- 1 C sugar
- ½ tspn salt
- ½ tspn nutmeg
- 3 C soymilk or almond milk
- 1 ½ T Earth Balance
- 1 tspn vanilla
- 1 tspn cinnamon
- ½ C raisins (optional)
Preparation:
- Preheat oven to 350 degrees.
- Combine all ingredients in a greased baking dish.
- Bake for approximately 1 to 1 ½ hours, stirring every 15 minutes if possible.
- Serve warm.
