Ingredients:
- 4 c vegetable broth
- 3 c potatoes, finely diced
- ½ c onion, minced
- 1 c sliced mushrooms
- 2 cloves garlic, minced
- 5 Roma tomatoes, chopped
- 2 c raw spinach, chopped
- 1 c lima beans, frozen (optional)
- 1 c corn, frozen (optional)
- 1 tsp dried parsley flakes
- Pinch of basil
- Pinch of oregano
- Pinch of black pepper
Preparation:
Add all ingredients to broth and simmer for 30 minutes.
