- 2 – 15 oz cans black-eyed peas, rinsed and drained
- 1 can shoepeg corn, rinsed and drained
- 1 green pepper, diced
- 4 scallions, diced
- 2 or 3 tomatoes, seeded and diced
- ½ large purple onion, diced
- 2 cloves garlic, minced
- 8 oz bottle of fat free Italian dressing
- Combine all ingredients in a large bowl.
- Chill and serve.
