Zucchini “Crab” Cakes

A great way to use your home-grown zucchini, if you have an excess. Otherwise, purchase 2 medium,firm zucchini from your produce section.


  • 2   1/2 cups grated zucchini
  • egg replacer, equivalent to 1 egg
  • 2 T Earth Balance, melted
  • 1 cup bread crumbs
  • 1/4 cup minced onion
  • 1 tsp Old Bay Seasoning
  • 1/4 cup whole wheat flour
  • cooking spray


  1. In a large bowl, combine zucchini, egg replacer and Earth Balance. Stir in bread crumbs, minced onion and seasoning. Mix well.
  2. Shape mixture into patties. Dredge in flour.
  3. Heat a medium skillet over medium high heat, spray with cooking oil lightly and cook patties until golden brown on both sides.
