Ingredients:
- 2 large cucumbers, chopped
- 1 scallion, white part only, minced
- 1 garlic clove, finely chopped
- 1/3 c finely chopped mint (optional)
- 2 T chopped parsley
- 1 T lemon juice
- 3 drops stevia (sugar substitute–found in local health food store) or 1 tsp real Maple syrup
Preparation:
- Toss all ingredients together and chill in refrigerator for several hours or overnight.
- Toss again before serving and if desired, garnish with sweet red pepper.
