Cucumber Salad

Ingredients:

  • 2 large cucumbers, chopped
  • 1 scallion, white part only, minced
  • 1 garlic clove, finely chopped
  • 1/3 c finely chopped mint (optional)
  • 2 T chopped parsley
  • 1 T lemon juice
  • 3 drops stevia (sugar substitute–found in local health food store) or 1 tsp real Maple syrup

Preparation:

  1. Toss all ingredients together and chill in refrigerator for several hours or overnight.
  2. Toss again before serving and if desired, garnish with sweet red pepper.
